Eat Drink Birmingham

I mentioned last week that I had attended the Eat Drink Birmingham event and had a great time! The event deserves it’s own post because there was too much deliciousness not to share!

Eat Drink Birmingham

The focus of the event was to educate the attendees about how great beer pairs with food. There are so many different craft brews out there of all flavors and notes and when paired with certain food tastes, it can heighten your experience! You all know that I am more of a beer person than a wine person, so this event was so great for me!!!

While there were a TON of great pairings at Eat Drink Birmingham, I am going to share with you my favorites! As there were so many, and it became very crowded and I didn’t get to take a picture of everything I tried.

My top favorite pairing was Silvertron Cafe’s White Chocolate Bread Pudding with Raspberry Coulis and Avondale Brewing CO’s Spring Street Saison!!!

Silvertron Cafe

The spicy pepper taste of the Saison really complimented the sweet and tart flavorings from the bread pudding and raspberry. I may have tried this twice. I couldn’t help myself!

My favorite plate was hands down Bellini’s Filet Fricasse!!

This dish had a delicious, tender filet over roasted corn, gorgonzola, and fingerling potatoes with balsamic glaze. It was truly amazing and I cleaned my plate for sure!! It was paired with Fairhope Brewing’s Causeway IPA which I am sure was a delight for those of you who like IPA’s…I do not.

The best smell in the room came from Bottle and Bone’s honey bacon!!! It hit your nose the second you walked in the space and it was the first thing I hit up!

Bottle and Bone Bacon

This bacon was paired with Straight to Ale’s Brother Joseph Double. The notes of toffee, chocolate, raisins and plums from the beer really mixed with the salty taste of the honey bacon! Truffles the boar was there, and I felt a little guilty grabbing the bacon but they assured me this wasn’t Truffles! haha 😉

Bottle and Bone

I tried parnsips for the first time here and it surely will not be my last! dg had their Parsnip Bisque with Honey Crisp Apple chips that was just delightful!! It was served up with Rocket Republic’s Terrestri-Ale Triple that just heightened the sweet and savory notes of this soup!

IMG_4864

For those who were the DD’s, Red Diamond was there with their amazing tea! I tried the Strawberry Peach tea for the first time and WOW!! I am going to be looking for this in the stores around here because I just have to have more!

I am so lucky that I was able to attend this event! Birmingham has really become a true foodie city. We are blessed with some amazing restaurants and chefs that give us a great dining experience! A huge thanks to the Alabama Brewer’s Guild and the Birmingham Originals for such a fantastic event! To get more information and see all of the pairings, you can visit the Eat Drink Birmingham page. I can’t wait for next year!

Weekend Shenanigans & Getting Fit

Can you believe March is here? Say whaaa?

I had been fighting off getting a cold starting around Thursday after lunch. On Friday we decided to stay in since I wasn’t feeling 100% We caught up on some of our shows and then I started reading Yeah, Maybe. You guys, I could NOT put this book down! I literally read half of the book in one sitting. The only reason I stopped was because it was getting super late and I knew I needed to go to bed.

Saturday we decided to hit up the thrift store in Pell City. It was a bust, but since we were half way to Oxford at that point….we decided to keep driving! We hit up a few there, stopped by my mom’s house for a while to see her and my fursisters, ate at Jefferson’s and then headed up Hwy 431 and hit every thrift shop between Oxford and Gadsden!! We ended our evening by birthday shopping for Christopher and Cooper (two of our nephews) and getting some of our grocery shopping done. Grocery shopping on Saturday night is awful, so many meats had expiration dates of Monday. Uh, no thanks…so I am going to have to finish getting our stuff tonight after work.

We grabbed Moe’s BBQ on the way home.

Weekend eats…

weekend eatsChicken Salad Chick lunch on Friday (scoop of Fancy Nancy with pasta salad and fruit), Moe’s BBQ Smoked Turkey with baked beans and potato salad(which I gave to Chris), and Jefferson’s cheese fries that had way too much cheese on them. Yes, there is a thing as too much cheese…who knew??

Sunday I worked on some blog posts, organized and started cataloging our video game collection, reading the rest of Yeah, Maybe (review to come) and finishing my research on IIFYM and purposeful household plants (post to come!!).

I realized that all of my nieces and nephews are too old for the Sesame Street Wrapping paper I have. I finished up one of the rolls for Cooper because I know he cares nothing about what the presents are actually wrapped in…just what they are!

wrapping_paper

We took the presents to my sisters house to celebrate with them! I can’t even believe that Cooper is 5 today and Christopher recently turned 10!!!! It also made me remember that the boys are the same age difference as Tracy and I. And that all of our youngest nieces and nephews (there are three of them the same age) all turn 5 this year and will be starting kindergarten in the fall! I can’t even handle that!

In other news…

Erin and Kristen brought back their 4 Weeks Fit Challenge! This is perfect timing for me! I shared my new work out schedule on Friday, so that will be part of my goal for the next four weeks…continuing with my C25K program.

The other part of my challenge will involve the kitchen. If you didn’t already know, unfortunately, abs are made in the kitchen. I have been doing research for a few weeks now on the IIFYM plan and then Mia posted this last week. Her post was great and covered the basics that you need to know, so I wont go in to some long spill.

Basically you are allotting yourself “x” amount of calories each day. But you are focusing on how many of those calories come from protein, carbs and fats. You can eat whatever you want, just so long as it fits in your macros.

Shit got real and I bought a food scale, so you know I am serious!

If you are planning on participating in the challenge, best of luck! Let me know so I can keep up with you! There is more winter weather planning to wreak havoc on the south in the form of freezing rain later this week. Gross. I love snow, I do not love ice. I really enjoyed the snowy views on my commute Thursday morning…

Cucumber Salad and Lunch Ideas

One of my favorite places to go for lunch on Friday is Tazikis. It is a greek style restaurant with gyros and great sides like pasta salad and cucumber salad. I thought about it last time I was there, and I just knew I could recreate cucumber salad at home!!

Cucumber Salad

Theirs just had cucumbers, red oinions and tomatoes with feta. I decided to add some garbanzo beans to make it more filling.

What You Need

1 cucumber (diced)

1/2 red onion (diced)

1 can of garbanzo beans (drained and rinsed)

4 roma tomatoes (diced – I also cut out the juicy seedy part so it didn’t over power or make the salad soggy or slimy)

feta cheese (I love feta, I used the entire 4 or 6 ounce container)

3 tbsp red wine vinegar

1/4 cup of olive oil

2 tsp oregeno

1/2 tsp salt

What You Do

– Combine the red wine vinegar, olive oil, oregano and salt in a small bowl with a whisk.

-Combine the cucumbers, onions, tomatoes, garbanzo beans and feta in a bowl. Add dressing and mix.

– I kept mine in the refrigerator and served it cold for lunches all week.

Enjoy!

I also wanted to share what I have been having for lunch lately. You can really get stuck in a rut with lunches when you bring them at least 4 days per week. I reserve most Fridays for what has become my “lunch club,” where I go out with same group of girl friends. No matter how tempting my co-workers lunch choices are each day, I manage to stick to my guns and eat what I bring. There is so much more than just sandwiches and salads, you guys!

Lunch Idea Collage

Above you will see veggie soup with vegetable noodles, turkey sausage, cheese and crackers, cottage cheese, mixed steamed veggies, lemon pepper tuna with crackers, quinoa with spinach, tomatoes and feta cheese, apples, cuties, celery and carrots, edamame, black bean burgers, and ham salad sandwiches. If you have questions about any of them (recipes or where I get it) just ask in the comments below!
What are some of your favorite lunch ideas? I am always looking to switch it up!

Damn Delicious Peanut Butter Cookies

Last Sunday we were settling in to watch some TV. Chris mentioned that he could go for something sweet. I told him that we didn’t really have anything sweet and he looked disappointed. I thought for a moment and said “Hang on!” I searched the pantry and found that I had all of the ingredients on hand to make homemade peanut butter cookies.

Our oven has been broken, so I could only make six cookies at a time in our toaster oven. If that isn’t love and dedication, I don’t really know what is. After the first batch came out, we enjoyed a few. Chris said, “So you made these from scratch?” I said, “Yup, there really isn’t many ingredients needed to make these, we had everything here.” He then said, “This is the best thing you have ever done since we have been married.”

I wasn’t really sure to take that as a compliment or an insult. Thoughts? Haha!

There is nothing special about this recipe. Just a consistent one that makes perfect cookies every time that has been handed down again and again over the years.

Peanut Butter Cookies

What You Need

1 cup sugar

1/4 of sugar in a separate small bowl (to roll cookies)

1 stick butter at room temperature

1 egg

1 cup peanut butter (creamy not chunky)

1 tsp vanilla

1 1/2 cups flour

1/2 tsp baking soda

1/2 tsp salt

What You Do

-Preheat oven to 375

-Grease baking sheet or spray it with some olive oil

-In a large bowl, cream together 1 cup of sugar and butter. Beat egg into mixture.

-Mix in peanut butter and vanilla until you have a creamy, smooth mixture.

-Stir in flour, baking soda and salt.

IMG_4546

-Roll cookie dough into one inch balls, then roll around in the additional 1/4 cup of sugar. Place on baking sheet and press with a fork vertically and then horizontally to form the shape.

– Bake at 375 degrees for 12-15 minutes.

This makes two dozen cookies.

Enjoy!!!

Ham Salad

As most of you know, I am from the north, just outside of Pittsburgh. There are a few things up north that you just cant find around these parts, ham salad is one of them! (See also Snyder of Berlin Chips, Nibble with Gibble, real Italian food, a decent cheese steak, the list goes on.)

I remember when I was younger my mom would take my sister and I in to downtown Greensburg to this little deli store called Anderson’s. We would head straight to the back deli counter and order a pound of the ham salad. Then she would pick up fresh baked rolls and some Sweedish red fish and head to the register. Anderson’s had the BEST damn ham salad you ever did eat!

Each year after we moved and went home to visit, my grandma would go to Anderson’s and pick up ham salad for us to have while we were there. Sometimes we would even fill a cooler with some to take back home with us. Unfortunately, Anderson’s closed a few years ago and those days are no more. No one had ham salad like Anderson’s. Not no one. (Hangover style)

My sister scoured the internet and stumbled upon a recipe for ham salad out of Greensburg, PA. With a little hope and a whole lot of praying she chopped up some ham we had left over from Christmas and tried to recreate the masterpiece.

Folks, she did it!!!! And then she promptly met me half way between our houses to deliver to me the best lunch I have had in a long time.

I present to you Greensburg, PA style Ham Salad!!!!!

Ham Salad

What You Need

1/2 pound ham, coarsely chopped (real ham none of that deli full of water crap, you can get precooked at the store)

2-3 tablespoons of mayonnaise

3-4 tablespoons sweet relish

1-2 tablespoons drained diced pimentos

What You Do

Throw all the ingredients into a food processor and pulse until they’re chopped into a rough paste.

Spread that delicious ham salad onto a fresh bun and enjoy!!!! (I prefer Hawaiian Rolls)

I have heard that people also serve this over hard boiled eggs. You do what you want.
