Weekend Shenanigans

And just like that, the middle of April has come and gone! Tax Day is here. I just have a few questions…

And not to mention the millions of worthless people who are sitting on their asses at home riding out the system not even trying to get a job because “they can make more money not having one.” Why can’t we claim all of them? Don’t even get me started.

This weekend just flew right on by, as they always do. We had a special visitor at lunch club on Friday, Laura’s baby boo! It was so fun! We ate at PT’s in Homewood. Nachos were obviously devoured. I had a sensible salad and cup of chili as my entree to balance them out 😉

PT's Homewood

Friday night I read some of my book and watched lots of Fixer Upper. It was fabulous.

Saturday morning I cleaned the house and then my mom came and got me and we went shopping for a few hours. Check out the fun things I grabbed at Nordstrom Rack! Sock liners for my Chucks, they work perfect. And the smaller sized Urban Decay shadow primer which was only $5.97. It runs $12 at Sephora. Score!!!

I then met up with Chris and his family to celebrate my SIL’s birthday at Konomi! I always eat way too much at Hibachi!

Sunday was spent meal planning, grocery shopping, prepping and catching up with all of our shows. We started the second season of Unbreakable Kimmy Schmidt and we also checked out The Ranch. Have you seen The Ranch yet? It isn’t mind blowing by any means, but I like it.

I hope you all had a fabulous weekend! Linking up with Biana.

Weekend Shenanigans

The first weekend of April is here and gone and the south enjoyed the upper 60’s and lots of sunshine. I never complain about that! We had a nice balance of getting shit done and doing nothing at all. That’s the perfect weekend.

Friday, Laura and I hit up The Wooden Goat in Avondale. We have been wanting to try them since they opened, but up until this Wednesday they weren’t open for lunch. When Laura saw the announcement on Instagram that they were now doing lunch, we knew where we were headed Friday! Our food was amazing and I can’t wait to go back. I had a hard time deciding between the Korean BBQ Beef and the Indonesian Fried Noodles. I got the beef this time.

Friday night, Chris and I settled in to catch up on some of our shows and I made a quick gnocchi with red sauce.

Saturday morning I stayed inside and cleaned, and Chris went outside to cut the grass. Obviously cutting the grass is a thing again, since this was our second time in two weeks. I also squeezed in a little time with Wooly Yoshi on the Wii U, then we headed downtown to grab a late lunch. Chris hadn’t been to Skycastle yet, so we went there. They have the best happy hour every day!!! From 3-6 you my favorite appetizer and meal, the fried pimento cheese balls with andoulsa sauasge and burger, are super cheap. You can also get any draft beer under 8% ABV for $3!

They house made pickles are worthy of mentioning as well. Nothing I love more than house made bread and butter pickles! I have got to learn how to make them myself some day.

After that, we headed over to World of Beer to catch up with our favorite bartender who we haven’t seen in months.

Sunday was meal planning, grocery shopping and food prep. I made a Vegetarian Quinoa Enchilada Casserole to take for lunches this week.

A Paleo Pumpkin Coffee Cake using almond flour, coconut flour and coconut sugar for breakfast. (AMAZING!!!!!)

IMG_8461

And some sweet potato gnocchi with a butter sage sauce for dinner.

IMG_8467

Gnocchi twice in one weekend, a new record!

The rest of the day was spent watching tv, cleaning up some of the guest room, finishing a book, and taking an hour nap in the afternoon.

I hope you all had a fabulous weekend! Linking up with Biana.

The last weekend of March was here and gone! I can’t believe Easter has passed by so quickly too!!!

My Friday started out with a great lunch at Real and Rosemary with Laura. Real and Rosemary is a new spot in Homewood that offers healthier lunch options and is just the cutest place! I love the rosemary that was planted out on their patio. I ordered the Spiced Rubbed Chicken with succotash and a corn polenta cake. Everything was delicious and I didn’t feel an ounce guilty about the meal.

I got out of work a little early on Friday so Chris and I spent some time over at his parents house Friday evening and called it an early night.

Saturday morning I cleaned the house, played some Wooly Yoshi on the Wii U and then we headed out to Hickory Tavern for a late lunch. Everything was delicious as always! We split the Shredheads (basically fried hashbrown balls) and I had the Korean BBQ tacos and sweet potato fries.

Every Easter, Chris and I have breakfast at Waffle House and this Easter was no exception! I love our traditions!

Waffle House

After breakfast, we headed over to Chris’s parents house to help get ready to host the family for lunch. It’s always great seeing everyone! After that, we headed to Walmart to pick up a few things since we didn’t get our grocery shopping in.

And just like that the weekend was over. I feel like we hardly got anything done, but that is the way most weekends go…right?! I hope everyone has a fantastic week!

Oh allergies!!! Spring is in full force down south, regardless of the fact that we had a frost warning last night. Allergies are running fierce!

Friday night I came home to all sorts of Easter surprises on our mantle!

Chris is so sweet! I love how he got me Hello Kitty and Puppy coloring books instead of adult ones. Does he know me or what? Chris had his friend over and we streamed the Ultra Music Festival on the projector screen. I didn’t hang down there for all of it, but I definitely caught Alison Wonderland!

IMG_8320

And had the dinner of champions.

Best Damn Cherry Cola

Chris surprised me with a 6 pack of the Best Damn Cherry Cola. I was really excited, but it wasn’t as great as you would think. It wasn’t awful…but just meh. I might try it has a hard cola float next weekend!

Saturday morning was spent cleaning and doing laundry. I made the sweet potato hash for breakfast, then we hunkered down with the dogs for the rest of the day and caught up on our TV shows and I went ahead and did our grocery shopping so that I could get the stuff to make pork medallions for dinner!!! One of our most favorite cheat meals!

Sunday morning was the passage into the spring in summer down south with the start of grass cutting season. We weren’t the only ones, at least two other people in our neighborhood had the same idea and were out there at the same time. I also got a pot of homemade sauce on for spaghetti! Sliced up some thick pepperoni to go in it!

IMG_8340

And made a meat and cheese plate while we watched Making a Murder.

IMG_8325

Glad we finally got to start that show. It was very interesting, and frustrating. What is up with that nephew??  So many thoughts!!!

IMG_8346

I also read a book between Saturday morning and Sunday morning, The Power of Broke and colored about 10 pages in the Hello Kitty coloring book. No shame in my coloring game!

Linking up with Biana. I hope you all had a great weekend!

Weekend Shenanigans

The Monday after the time change is a real struggle, am I right?? I had to tell my body that no it wasn’t 330am it was really 430 and I need to get the hell up and get that work out in!!! Just a quick 20 minute HITT for me today, as anything else would have just been cruel and unusual punishment.

This weekend was spent cleaning and organizing, eating Mexican food, Hulu and Netflixing, meal planning and grocery shopping, and putting Besties do Bham back together again.

I really messed up when I downloaded a new theme for the site and I had to have Chris dig me out of my mess. One he got it looking like a blog again, I took it over and started the actual design. It has a lot of work left, but at least we can start posting in the mean time!!!  Just in time too, as two new restaurants are opening this week, and two others have opened recently! Laura and I have lots of eating to do!!!

Speaking of eating, I made a sweet potato skillet hash on Saturday that was nothing short of amazing. You cook two sweet potatoes either by baking them or microwaving them for a few minutes until they are soft.

Cut up some bacon and cook it in a skillet until mostly done, add onion and cook for five minutes. Add your potatoes and cook for five minutes. Make holes and drop in some eggs, cover and cook five more minutes. Cut up some green onion and boom bang delicious!

IMG_8251

This recipe got me to eat eggs again, and guys that is huge. I was on an egg strike for months because I go through phases where I hate them. I even managed to do an entire Whole 30 without them. That takes dedication, let me tell you.

In other food happenings, I made gnocchi last night! It went well with a dose of Vampire Diaries and a side of The Originals!

IMG_8268

Have you guys ever watched The League? Chris’s friend got him in to it and he has been binging the shit out of it. It’s pretty terrible and none of the episodes really have a point to them exactly….but I have to admit it is pretty damn funny and I have found myself paying attention more when it is on.

I hope that you all had a fabulous weekend!!! Let’s kick some Monday ass!
